Meanwhile the official designation of a sparkling wine as Champagne is something that is legally protected and regulated by wine laws in the European Union. In order for a sparkling wine to be labelled Champagne, it must be produced in the Champagne region of northern France and must be made using the traditional ā€œMethode Champegnoiseā€. The method involves several steps, including the one key step that differentiates Champagne from other sparkling wines made in this style which is to have it undergo a second fermentation after it has already been bottled.
