A Taste of Napa's Legacy: Honig Vineyards' Late Harvest Sauvignon Blanc

Did you know that wine production in Napa Valley dates all the way back to the 18th century?

Wine grapes were first planted in Napa by Spanish settlers, and the region burst onto the modern world stage by gaining recognition internationally at the Judgement of Paris in 1976 and becoming California’s first American Viticulture Area, or AVA, in 1981. To this day, Napa continues to thrive in the worldwide wine industry, and a perfect example of this is the amazing work happening at Honig Vineyards. What started in 1980 as a small family operation is now an industry leader in sustainability and success. Honig Vineyards embodies the perfect balance of timeless history and modern innovation in every bottle, but today I want to highlight their Late Harvest Sauvignon Blanc

Crafted from tressled vines originally planted in 1995, this wine is truly unique. The vines here are afflicted by something called Botrytis cinerea, or “Noble Rot”. Due to the close proximity to the Napa River, the excess water causes a fungus to grow that weakens the skins of the grapes. This causes the water within the grapes to evaporate faster, which means the sugars and acids within the grapes become concentrated. The result of this is a rich and sophisticated, yet approachable wine. Deep notes of green apples and golden pears are balanced out by the citrusy brightness of grapefruit and meyer lemon. All this gets wrapped up in the sweet smoothness of vanilla and ripened stone fruits for an ideal dessert wine. This Sauvignon Blanc is the perfect pair to a warm apple crisp or cheese course to complete a meal.

Happy sipping!
